  • Pichaya 'Pam' Soontornyanakij, Potong, Bangkok
    2025/06/17

    Today on our episode #414 of All in the Industry, Shari Bayer's guest is Pichaya 'Pam' Soontornyanakij, chef/owner of Potong restaurant in Bangkok, Thailand. Pam is an inspirational Thai chef, who has become an international culinary figure, and is serving up progressive, stimulating cuisine in a historic setting. Chef Pam was named Asia’s Best Female Chef in 2024, and The World’s Best Female Chef Award in 2025 by The World’s 50 Best Restaurants. Originally training to become a journalist, Pam turned to cooking and studied at the Culinary Institute of America, and trained under renowned chef Jean-Georges Vongerichten in NYC, before returning to Bangkok. In 2019, when her family’s 120-year-old Chinese herbal pharmacy building became vacant in Bangkok’s Chinatown neighborhood, she took over the space with her family, and after an extensive renovation, created Potong, a one-star Michelin restaurant; currently #13 on Asia’s 50 Best Restaurants 2025, featuring a tasting menu where she tells stories of her family’s unique heritage through some 20 courses of progressive Thai-Chinese cuisine. Shari had the pleasure of dining at Potong a few days before this in-person interview in late April.   • "On the Road" at the Women in Hospitality Leadership Conference 2025, Las Vegas

    Today on our episode #413 of All in the Industry, Shari Bayer has a special “On the Road” show from the Women in Hospitality Leadership Conference 2025 presented by MAPP & the Women's Hospitality Initiative (WHI), which took place on March 30 & 31, 2025 at the Wynn Las Vegas.

    Today on our episode #412 of All in the Industry, Shari Bayer has a special “On the Road” show from Ojai Food + Wine 2025, presented by Food & Wine, California's premier epicurean weekend, which took place at the beautiful Ojai Valley Inn in Ojai, CA from March 13-16, 2025. Curated by Ojai Valley Inn’s General Manager Ben Kephart, the weekend featured an all-star lineup of chefs, & food & beverage personalities, including Nancy Silverton, Alice Waters, Jeremiah Tower, Mei Lin, Christopher Kostow, Grant Achatz, Sherry Yard, & more! Shari participated as a speaker as “Host” of a Cooking Demonstration: Foothills Cuisine of Blackberry Farm with Chef Cassidee Dabney; and an interview-style conversation with Farmer Lee Jones of The Chef's Garden (ep #36). It was a glorious weekend of delicious eats, drinks & conversations.

Early in her career, Nancy was named Food & Wine Magazine’s “Best New Chef.” In 2014, she received the highest honor given by the James Beard Foundation for “Outstanding Chef.” Nancy graced Ojai Food + Wine's magazine cover, & participated in its Opening Night Reception, Best of Rome Dinner with Jonathan Waxman & Evan Funke, Book Signing & Conversation with Phil Rosenthal & Ruth Reichl, & Sunday Grand Tasting.   • Bo Bech, Restaurant Bobe

    Today on our episode #411 of All in the Industry, Shari Bayer's guest is Bo Bech, a Danish chef and restaurateur whose restaurant Bobe opened in late 2023 in an attractive townhouse in a cobbled city center square in Copenhagen. Shari visited shortly after its opening on her travels, and sat down with Bo for this conversation on a return trip to Copenhagen in Spring 2024. Bo is not only a celebrated chef and owner, but author and TV personality, and a trailblazer of the Nordic culinary movement. He describes himself as a curious human being, who first made his name at Restaurant Paustian, where he earned a Michelin star, before setting up Geist in 2011 (Shari's solo dining experience on episode #161 from November 2017). Working mostly with Nordic produce, Bo’s dishes are personal reflections of him as a chef, his background and his travels. Bo was also a guest on our show in April 2018, episode #174, which was recorded in person in Brooklyn while he was visiting NYC.     Today on our episode #410 of All in the Industry, Shari Bayer's guests are Rick Smilow, Chairman & CEO of the Institute of Culinary Education (ICE), and Lachlan Sands, President of the Institute of Culinary Education’s LA Campus. ICE, which the school is often referred to for short, is one of the nation’s most prestigious culinary schools, currently headquartered in NYC and with a second location in Los Angeles. This year, in 2025, ICE is celebrating a big milestone – its 50th anniversary. Rick's tenure began in 1995, when he acquired the predecessor school, Peter Kump’s New York Cooking School, which was founded in 1975 by Peter Kump, who was also the founder of the James Beard Foundation. Rick has been the CEO of ICE for 30 years. Lachlan, who has been at the helm of the LA campus since it opened in 2018, is the principal administrator responsible for the success of the school. Prior to working for ICE, Lachlan held positions as President, Director of Education, and Executive Chef.   • "On the Road" at MENA's 50 Best Restaurants 2025, Abu Dhabi, UAE

    Today on our episode #409 of All in the Industry, Shari Bayer has a special “On the Road” show from MENA’s 50 Best Restaurants 2025, which took place in Abu Dhabi, UAE on January 28th, 2025. This was the fourth edition of the Middle East & North Africa's 50 Best Restaurants awards, sponsored by S. Pellegrino & Acqua Panna, and hosted in partnership with the Department of Culture and Tourism - Abu Dhabi (DCT).

    Launched in 2022, MENA's 50 Best Restaurants is a celebration of the best places to eat across 19 countries in the Middle East & North Africa region.
